Roasted Butternut Squash with Thyme

It has been way too long since my last post but I have been still cooking like crazy so it is time to make up for lost time.

Roasted Butternut Squash with Thyme

butternut squash, cut in half
2 T oil
2 T maple syrup
salt and pepper
fresh thyme

Preheat oven to 400F.
Place butternut squash halves on a large baking sheet flesh side up.
Place 1 tsp oil and 1 tsp maple syrup in the middle of each squash.
Season with salt and black pepper.
Roast for 25 minutes, until flesh is fork-tender.
Sprinkle with fresh thyme leaves and serve!
